Note de dégustation
Le riesling brille de mille feux dans une robe dorée intense. Cela indique la maturité que les raisins ont pu atteindre dans le vignoble Kallstadter Saumagen. Le bouquet est typique du cépage et extrêmement élégant. Des arômes de pomme jaune et de pêche, ainsi qu’un soupçon de zeste de citron et de fleurs blanches, sont perceptibles. En bouche, le vin est très charmant et enjoué. À chaque gorgée, nous remarquons la qualité du Palatinat dans cette cuvée au meilleur de sa forme.

The 2021 Riesling Kallstadter Saumagen Kabinett trocken is both the first and the last harvest in this site, the very first pick of the green-tinged grapes and then the last pick, on 26 October 2021, of the grapes that still had a bright green color. The nose is restrained, but peach skin and pear peel come through, along with a subtle yeastiness. The palate comes in beautifully buffered, with apparent freshness, doing justice to its Kabinett status. It's bone-dry, smooth and, in a Pfalz-way, slender, still colored with that lovely streak of lemon and peach. This has both substance and style.

Bottled in early July the this year, the 2021 Kallstadter Saumagen Riesling Kabinett trocken is still young and a bit closed on the clear, deep and stony nose. Fine and very elegant on the palate, this is a round, lush, refined, firm and persistently salty Saumagen with a long and intense finish. This is a serious, sustainably intense Riesling with substance and terroir expression after a long hang-time. It needs tine, though. 11.5% stated alcohol. Natural cork. Tasted at the domaine in August 2022.
Accords mets & vin
Viandes blanches et veau. De même, il s’accorde très bien avec les plats de légumes comme les gratins et les fricassées ou le risotto.
Vinification
Les raisins de riesling proviennent du vignoble Kallstadter Saumagen. Dans le chai du domaine Koehler-Ruprecht, le travail a lieu de manière traditionnelle. Cela signifie une fermentation spontanée, une longue macération et un élevage en fûts de bois allemand. La mise en bouteille a lieu sans clarification. Un vin blanc élaboré dans les règles de l’art au plus haut niveau !
